Episode #065 – Sherry Cocktails

Sherry is a fortified wine from the Cadiz Provence of Spain. All sherry is made from white grapes, and the wine is fortified in brandy casks or other grape spirits. Sherry casks of varied ages (generally aged one to ten years) are blended in a process called Solera before being bottled.

There are several styles of sherry, but the most common in sherry cocktails are Fino, Manzanilla Amontillado, and Oloroso.


The driest style Sherry, Fino is generally delicate, pale, and gentle in flavor. It’s generally made from Palomino grapes, and are tank-fermented. The white wine is fortified under a yeast called flor, which prevents the wine from oxidizing.


Manzanillas Sherry is made with the same process as fino. Manzanilla is fresh, saline, and light sherry.


Amontillados are not protected by the flor yeast like Manzanilla and Fino wines. The result is a brown coloring. The oxidization also adds a nutty, earthiness, and is often a little buttery.


Olorosos can be sweet or dry in style, depending on whether the wine includes Moscatel (sweet), or is made strictly from Palomino grapes (dry). Oloroso can age decades in a barrel, which creates extra richness and complexity that stands up well to aged rum.

Sherry Cocktail Recipes

Adonis (Imbibe)

  • 1½ oz. Oloroso sherry
  • 1½ oz. sweet vermouth
  • 2 dashes of orange bitters
  • Twist of orange

Combine all ingredients in a mixing glass, add ice, and stir until well chilled. Strain into a chilled coupe and garnish with an orange peel.

Tuxedo Cocktail (not the Tuxedo #1 or #2)

  • 2 oz. dry gin
  • 1 oz. fino sherry
  • 1 dash orange bitters

Combine ingredients in a mixing glass, and add ice. Stir, and strain into chilled coupe or cocktail glass.

Quarter Deck

  • 1½ oz. aged rum
  • 1½ oz. Oloroso sherry
  • 2 tsp. fresh lime juice

Combine ingredients in a shaker, add ice and shake well. Stir, and strain into a chilled coupe or cocktail glass. Or over fresh crushed ice in a rocks glass.

La Perla (from PDT)

  • 1½ oz. Reposado tequila
  • 1½ oz. Lustau Manzanilla sherry
  • ¾ oz. pear liqueur
  • Twist of lemon

Combine ingredients in a mixing glass, add ice and stir until chilled. Strain into a chilled coupe and garnish with a twist.
